What happens when the chef goes all Earthen in March?

Our Chef’s decided he was going to slow cook all month of March. In clay vessels in a mixture of the best hand ground spices, like he had seen and tasted back in the day in his home town.  This Wednesday he gave us the Aattiraichi  Milagu Saapad (ஆட்டிறைச்சி மிளகு) spicy lamb curry with black pepper, slow cooked & served in an Earthen pot, with steamed rice, layered laccha paratha & accompaniments. Served on our Wow Wednesday Cuisine Innovation Days!
